If you’re not content with having just hairy crab, head to Greater China Club for some decadent east-west pairings of the dish, featuring the also in-season white truffle. In this Lai Chi Kok gem, which doubles as a jazz lounge and member’s social club, Michelin-trained Chef Chan Wai-Teng will be serving up Shanghainese hairy crab dishes like sauteed lobster fillet with hairy crab roe, or sauteed lobster with sea urchin, to which you can add white truffle for just $42HKD per gram.

Involtini Italian Cuisine
For something completely off the Chinese map, try Involtini’s hairy crab tasting menu. The five-course menu include dishes like Italian crab cake, crab roe ravioli, crab roe squid ink tagliolini, stuffed hairy crab and more for $748HKD per person.

For a balance between tradition and modern twists, this season at Mott32 on top of traditional steamed hairy crab ($498HKD/crab) you’ll find nine different creative takes on the crab in its menu: Think individual xiaolongbao stuffed with Kurobuta pork and plenty of creamy golden crab roe and meat ($128HKD/portion); hairy crab roe soufflé ($280HKD); and a super decadent steamed cheung fun rice roll, stuffed with hairy crab roe ($280HKD)

Table has been the talk of the town of late for using a special depuration cleaning system for all its seafood, so you can rest assured all the hairy crab served here this season is of exceptional cleanliness and flavour too. The menu for two ($689HKD per person) features seven creative dishes, from crab sashimi to female and male hairy crab meat and roe—paired respectively with Iberico jamon tortellini and blue mussels, and 63˚ onsen egg and sea urchin. We’d recommend rounding up the crew for the six person menu though, so you get a taste of Table’s popular dish of gooey, luxurious mud crab roe and meat mixed in with piping hot garlic rice—see video above.

Xia Fei Society
Really like crab roe? Head to Xia Fei Society to get your fill: Not only will you find traditional Chinese dishes like steamed minced pork and crab roe dumplings, or roe mixed with noodles; you’ll also find creative dishes like sautéed crab roe with toast, or baked crab shells stuffed with roe.

Want your fix of hairy crab this year with a little bit of Sichuan flair? Head to Yun Yan for treats made from the highly coveted Jiangsu crabs.
