He has revolutionized the culinary game yet again, this time putting creative twists on iconic classics and adding his unique touch on each dish by using the finest ingredients France and Hong Kong has to offer.

Flown from halfway across the world, France’s famous plump La Lune oysters are sweetly refreshed with diced green apple and vodka granite to start off the menu. Followed by delectable appetizers, which include Joselito Iberico ham layered with fruity tomato jelly and goat cheese foam, as well as a crunchy croustille coated in rich Hokkaido sea urchin paste and dipped in an eggshell stuffed with fluffy sea urchin-blended scrambled eggs. Mains include a grilled Maine lobster doused in hazelnut butter and foie gras sauce, served with fried girolles and apricots, and a French “Limousin” lamb saddle roasted with aromatic herbs and spices—the perfect surf and turf to satisfy your hunger. Finally to cleanse your savory palate, the six-course menu ends with a sweet lychee sorbet topped with verbena poached peach and black currant foam. Bon appétite!
