Head Chef Robin, as an avid traveller himself, has crafted the "Summer Popical Fruit" Set Dinner menu that combines various tropical fruits and spices up the summer with different levels of acidity and sweetness. 

To start with, the appetizer “Abalone with Avocado and Yuzu Salad” promises refreshment and elegance as the mixed green with abalone slices on top is complemented by fresh yuzu pulps and avocado, as well as the sweet and sour passion fruit dressing. The soup course is a choice between “Coconut Consommé Soup” and “Green Apple Cream Soup”. The former simmered from coconut meat, red dates and pork shank, while the latter blends U.S. green apples, celery and fresh cream. The middle course “Squid Ink Pasta and Prawn Meat with Papaya Puree” is a creative combination of pan-fried prawn meat, al-dente squid ink spaghetti and Thai papaya puree. 

To follow, the chef has created five sumptuous choices for the main course, featuring “Sous Vide Canadian Corn-fed Pork Rack with Prune Glaze”, “Sous Vide Duck Breast with Peach Port Wine Sauce”, “Pan Fried Norwegian Salmon and Scallop with Guava Puree”, “Sous Vide New Zealand Lamb Rack with Burnt Orange” (+$58), “Grilled U.S. Angus Tenderloin with Caramel Pineapple” (+$58). All are cooked to perfection with bursts of aromas that would definitely bring you out of the city's heated surroundings. 

To cap off a dazzling dining experience, diners may choose from the three options of “Orange Chocolate Mousse Cake with Orange Sorbet”, “Lemon and Orange Semi Candied Cheese Cake with Lemon Sorbet” and “Pear Crumble with Vanilla Ice Cream and Aloe Vera” to finish the colourful dinner in a “Popical” way!

The “Summer Popical Fruit” Set Dinner is priced at $388 (+10% S.C.) per person, and for an additional $188, guests can enjoy three glasses of wine pairing.
