Culinary extraordinaire, Chef Israel de Freitas (Isy), continues to conquer food alchemy in Le Reve’s kitchen with his new seasonal set menus starting this July, combining the best of French and Japanese cuisine. Inspired by his love for music, his new menus feature the art of French cooking harmonizing perfectly with fresh seasonal ingredients from Japan. A set lunch menu starts at HK$168, a six-course menu starts at HK$790, and an elaborate eight-course dinner menu starts at HK$1,080. Le Reve also offers a four-course weekend brunch menu starting at HK$488.
One of his new signature creations that demonstrates a natural fusion between Japanese and French cuisine is Nihon Risotto, which features Arborio rice steeped in dashi fish stock and king prawn heads with a dash of sake, topped with red king prawns, culminating in the ultimate Asian-Western seafood experience. Another dish you should try is the Chou farci aux volailles, which features cabbage stuffed with free-range chicken, served with porcini mushroom infused vapor and Hokkaido pumpkin.
