Start with Chef Raphaël’s Beef Tartare, a marinated hunk of real buffalo mozzarella cheese, served with juicy tomato and fresh basil. Then, savor the full-flavored Pork Knuckle ($288), a tender yet crispy cut plated with fermented white cabbage; or the ocean-fresh Sea Bass ($198), which is pan-seared and served on a bed of seafood riso, cooked with saffron sauce, grilled octopus, langostine and scallop.

Elevate the evening with new signature cocktails for summer at The Ritz-Carlton Bar & Lounge. Three rare and vibrant concoctions have been added to The Ritz-Carlton Bar & Lounge’s exquisite menu of signature cocktails. La Belle ($108) features fresh pear and fresh lemon with vodka, along with French pear brandy and hazelnut syrup. White Chocolate Swizzle ($108)  is a bright and creamy fusion of gin, fresh lime juice, white crème de cacao, fresh mint, orange sherbet; and Rule of Purity ($118) is created from stone-ground matcha tea, enhanced with the exotic flavors of pineapple, coconut, kefir lime, lemon grass and ginger, then served in Japanese style.
