The return of summer also means the return of fresh berries bursting with flavour. Dalloyau's Head Pastry Chef Ken Thomas is making use of these treasures of the season to craft four seasonal delicacies this summer.
In July, Dalloyau offers the Opéra Raspberry (Individual: HK$58; 4 to 6 persons’ portion: HK$438). This treat features a pink joconde biscuit base, raspberry syrup with kirsch, praline buttercream with roasted almonds, chcolate raspberry ganache and a pink chocolate coating.
In August, Macaron Myrtille and Macaron Cassis (HK$24 each) will be available. Customers will be able to choose between an intensely fruity blackcurrant filling or a luscious blueberry butter cream filling.
September follows with La Fraise du Jardin (HK$58 each), an almond biscuit, lemon curd and strawberry mousse covered with a crunchy chocolate glaze feature in this delightful, strawberry-shaped treat. Other berry-inspired treats such as Tendresse de Fruits Fraise-Framboise, Tartelettes aux Fraises, Pétales Fruités, and Framboise will also be available.
